Should I do this winter roadtrip in December? I am traveling from Texas

I have 3 weeks off and was thinking of renting an AWD SUV to do this roadtrip. It is a dream of mine to see the parks in Wyoming in winter I will start from San Antonio->ABQ->I40 and 191 in Arizona up until SLC and continue from there as shown on the picture. Considerations: I have lots of flexibility and can wait out winter storms if they happen. I know the basics of driving in the snow and basic survival skills. I will probably need to add anti-freeze to the rental. I also cannot put chains on the rental so I need to be careful and avoid places with traction laws or wait the storms out. Overall, I'm kinda self-doubting myself because my dad who is a truck driver said I would die if I drive up there (but he drives through I-80 and I-25 which I won't). I really have no one to ask for more advice. It also seems a bit expensive overall, long drive, risky, but the romance of being up there in a cabin keep me awake at night.
