Alaskan couple headed to Sicily in February.

We're an Alaskan couple who escapes the frozen north every February. We typically head to Mexico (street-food and city focused, not resorts) or Central/South America, but this year we want to try something different and are looking at Sicily.
We loved Oaxaca and CDMX, and internet suggestions point to Palermo scratching that same itch in terms of incredible food, rich culture, and raw city vibrancy.
We’d also like to get out of the city for a chunk of the trip to explore the countryside—maybe around Castelbuono to do some hiking, walking, and see the more rural side of the island (we'll likely rent a car for this portion).
Would love to hear from anyone who has done a similar trip, especially in winter. Any thoughts on Palermo’s vibe or recommendations for rural place to base out of and winter hiking? Thanks!
